Chef Michael is now offering a full schedule of baking and pastry classes open to anyone desiring to expand their natural culinary talents. Hands-on classes are taught in his commercial bakery using his personal recipes that he has developed and created throughout his career.

You may be interested if you are:

  • An aspiring young chef who would like to enhance your baking and pastry knowledge and skills
  • A culinary school graduate who would like to enhance your baking and pastry knowledge and skills
  • A high school student with an interest in baking and pastry who might want to attend culinary school upon graduation
  • A home cook who has a passion for baking and pastry who wants to expand their knowledge and skills

Classes are a full six (6) hour day with a break for lunch. This is a “hands on” class with a light lunch served AND endless hours of entertainment by the Chef.

Effective January 1, 2016 it is our policy that if you cancel or do not show up for a class that you have registered and paid for, no refund or credit will be issued.  Our classes have a limited number of students.  If you have reserved and paid for a space, it is protected and we will close the class to new participants.  When you reserve and pay for a class, please make sure that you will be able to attend on that date.  You may book at the last minute if there is space available.


The fee per class is $100.00. You will also receive a recipe booklet with ingredient information, and recipes from the class. Be prepared to work in the kitchen and take lots of notes!

If you would like to book a “group” class, or schedule personal training sessions, please contact Chef Michael directly. He is also available to businesses for consultation.

We currently have the following classes available, and will be adding new classes for intermediate to advanced techniques for various specialties.

The Perfect Pie: This is a very popular class where you will learn how to make the best pie dough that can be used for both sweet and savory recipes. Pie fillings are made from scratch using his methods.

Summer Desserts: Light orange chiffon, fresh fruit and berries, custard. Simple desserts utilizing the fruits of the season plated to perfection.

Gourmet Cookies: Not your run of the mill cookies. You will definitely find a favorite or two in this class.

Gluten Free Desserts: Create decadent desserts that are too good to be gluten free.

Breads: Learn all about the role of flour in baking and how to make ciabatta, bagels, challah.

Cakes: The science of the perfect cake.

European Pastry: Create a wide variety of desserts originating in Europe using a universal dough and pastry cream.

Chocolate: Learn all about the different kinds and qualities of chocolate. You will prepare chocolate desserts that are out of this world.

Italian Pastry: One of the favorite classes so far. You will be amazed at the desserts created in this class.
